Country Roads - Recipes

A true sign of friendship in the country is the sharing of one's personal recipes.  Special formulas are passed down in families for generations and carefully guarded to insure your grandmother's famous potato salad doesn't show up at the next church social with someone else's name on it.  It isn't uncommon for someone to leave out an ingredient or two when you ask for their recipe for the delicious dish you enjoyed at their supper table and you discover your version wasn't quite as tasty as the one you sampled.

These are some recipes I've collected over the years and a few I concocted on my own.  You'll find all the desserts and sweet treats on a separate page.

Appetizers

 

Salads

Sweet and Sour Salad

1 lg, bag of lettuce
1 package or can of Chinese noodle

Prepare the dressing in a blender or food processor:

3/4 cup of sugar
1/3 cup of cider vinegar
1 tsp. of dry mustard
1 small onion, minced finely
1 cup of good salad oil

Process in blender or processor until mixture takes the consistency of mayonnaise.  Chill well.  Place lettuce and noodles in a large bowl and add the dressing.  Toss well.

Casseroles

Potato Casserole

1 1/2 pks. (24 oz. Orieda) Hash Browns or Crispy Crowns
1 can of cream of chicken soup
1 cup sour cream
2 cups shredded sharp cheddar cheese
1/4 cup diced onions

Mix ingredients well and place in 2 qt. casserole dish.

1 cup crushed Corn Flakes
1/4 cup melted butter

Mix corn flake crumbs and butter.   Spread evenly on top of potato mixture.  Bake 1 hour at 350 degrees.

Main Dishes

Quick and Easy Vegetable and Chicken Pot Pie

1 tablespoon margarine or butter
1 cup chopped celery
1 can cream of chicken soup
1/2 cup of milk
1/2 teaspoon onion powder
1/4 teaspoon dried thyme leaves
1/8 teaspoon pepper
1 bag (16 oz.) frozen vegetables (combination of broccoli, cauliflower, carrots)
1 1/2 cups cooked, cubed chicken
1 (10 oz.) can Hungry Jack Refrigerated Flaky Biscuits

In a large skillet melt the margarine.   Add celery and stir over med/high heat until crisp-tender.  Stir in soup, milk, onion powder, thyme and pepper.  Mix well.  Stir in thawed vegetables and chicken.  Heat through.

Spoon into 12"x8" baking dish and top with biscuits.  Place in preheated oven at 375 degrees for 20-25 minutes or until biscuits are golden brown and filling is bubbly.  Serves 4-6.

Quick and Easy Quiche

12 slices of bacon (about 1/2 pound) fried crispy, drain well and crumble
1 cup shredded natural Swiss cheese (about 1/4 pound)
1/3 cup fresh diced onion
2 cups milk
1/2 cup Bisquick mix
4 eggs
1/4 teaspoon salt
1/8 teaspoon pepper

Preheat oven to 350 degrees.   Lightly grease 9 or 10 inch pie dish.  Sprinkle bacon, cheese and onions evenly over bottom of dish.  Place remaining ingredients in blender or food processor, cover and blend for about 1 minute.  Pour mixture into pie dish and bake until golden brown, about 50-55 minutes.  Knife inserted in center will come out clean when done.

You can use thinly sliced ham, diced finely or add a small amount of chopped broccoli to the recipe.
